
I was going to scan in a wedding photo and follow in Becky's footsteps, but I'm too tired tonight to go to the extra effort. This photo is from Scot's first visit to SLC to meet my family (or my parents and Sarah at least). I believe it was February of 2003 at the Gateway mall. (*I know most of you have never seen Scot in glasses...he was only wearing them in preparation for his Lasik surgery).
It's been a great 3 years & it's gone so fast. Thank you to Jessica Blackwell for setting us up 2 months after I moved to Colorado Springs, it made my experience here entirely different than it otherwise could have been. I still have the first e-mail Scot sent me introducing himself...he was so cute. We met for lunch at Wooglins Deli on Tejon St. on Nov. 7, 2002 . I still remember exactly what we both were wearing (not because we matched) & I know we both ordered salads.
My first impression was that Scot was very nice & extremely ambitious. He intrigued me - I knew he believed in himself enough to actually make all his goals become reality, which is not something you find everyday (the private jet might have been a little much, but everyone has the right to dream, right?). I remember thinking that Scot's hair was a little too long (he kind of reminded me of Brother Joseph), so after I got to know him a little better I started scheduling regular hair appointments for him & the rest is history.
Naturally Scot thought I was the cutest girl at Wooglins (which isn't saying much if you've ever been there...) . He thought I was difficult to read & he certainly didn't understand my sense of humor, which was a little bit of a concern for me at first. My worries soon changed when I saw Scot at his parents house - he laughed at Steve's jokes (how could you NOT), so I knew he did indeed have a sense of humor and all we needed was a little time. 3 years later, I think we've made some serious progress on that front, right Scot?
It's been freezing cold here today. I left the house to do my Visiting Teaching late this afternoon and then brought Ethan home & left him with Scot so I could run to the store...it was far too cold to have Ethan outside for any period of time. I made Baked Parmesan Halibut (Dad's recipe), wild rice, green beans and Scot's favorite chocolate cake for dessert - it was a big hit. The biggest hit of the night was my surprise gift for Scot - a hockey stick signed by all the Ave's players. (Thanks to a former co-worker of mine, Emily Ford, for coordinating that...she's close friends with a couple of the Ave's players & went to great lengths during the playoffs last season to get this done for me before I left the USOC). I love surprises.

Baked Parmesan Fish - Warren Hansen
1-2 lbs. fish
1/4 tsp salt
1/8 tsp pepper
1/2 cup sour cream
2 Tbsp parmesan cheese
1/4 tsp paprika
1/8 tsp dried tarragon leaves
Mix sour cream and other ingredients together and spread over fish. Bake at 350 for 20-30 minutes. ** Tried and tested on Halibut, Trout and Salmon - all of which are delicious.

Wow! You are impressive!! I did no cooking on our anniversary. We love you both so much and are so happy you've had 3 wonderful years!
